Ingredients to prepare Asparagus and Cheese Cake

260 gr. of flour
A pinch of salt
125 gr. of butter
4 tablespoons of ice water
3 eggs
1 bunch of green asparagus
125 ml. of cream
50 gr. of grated Gruyere cheese

How to prepare Asparagus and Cheese Cake

The asparagus and cheese cake is exquisite. It is ideal as a light dinner, or it can even be used as a starter, so that diners can enjoy it while waiting for food. It is easy to prepare and nutritious, it is very attractive and allows for multiple ingredients. It has it all!

To make a delicious asparagus and cheese cake, the first thing to do is pour the salt, flour and cold butter cut into cubes into a large enough container and knead. Then we add the yolk of an egg and the tablespoons of ice water, one at a time, until we get a soft dough. We wrap it in film and leave it in the refrigerator for 30 minutes.

After this time we put the dough between two baking papers and roll it out with a rolling pin. We line a mold and cut out the excess dough, and put it back in the refrigerator for ten minutes.

Meanwhile, we preheat the oven to 200o C, with heat from above and below. We prick the dough, add a weight on top, like chickpeas, and bake for ten minutes. Then we take out, remove the chickpeas, and bake again for another ten minutes.

Separately, we put boiling salted water in a pot. We wash the asparagus and cut it to a size slightly smaller than the width of the mold. We blanch them for two minutes and then drain them and set aside.

We grate the cheese and put it in a container along with the cream and two beaten eggs. We reserve.

We lower the oven to 160o C, remove the dough and pour half of the asparagus into the base. Then we pour the dough on top and place the other half of the asparagus on top, and we put the mold back in the oven, letting the cake bake for about 40 minutes. Then we take it out and serve, if we want the dish hot, or let it cool and serve at room temperature. Delicious!
