Mozzarella Stuffed Crepes

Ingredients to prepare Mozzarella Stuffed Crepes

For the crepes:

125 g of flour
3 eggs
1 tablespoon butter (melted)
250 ml of milk
A pinch of salt
Butter (for frying)

For the filling:

400 g of cottage cheese or fresh cheese
100 g of grated cheese (mixture of 4 cheeses)
2 balls of fresh mozzarella (cut into sticks)
Fried tomato sauce (preferably homemade)
Ground pepper (to taste)
Salt to taste)
Grated Parmesan cheese (for gratin)
Fresh basil (to decorate)

How to prepare Mozzarella Stuffed Crepes

These mozzarella-filled crepes are a delicious combination of creaminess and flavor. With a mixture of cheeses and the final touch of fresh basil. They are a real delight!

First we prepare the crepes:

Place the flour, eggs, melted butter, milk and a pinch of salt in a mixer or blender. Mix until you obtain a soft dough without lumps.

Heat a nonstick skillet and lightly spread with butter. Pour a small amount of dough and quickly spread it throughout the pan to form a thin layer. Cook each crepe until golden brown on both sides. Repeat until you have made the 12 crepes and set aside.

Then we do the filling and assembly:

In a bowl, mix the cottage cheese (or fresh cheese) with the grated cheese. Add a pinch of ground pepper and salt to taste to enhance the flavor. Cut the mozzarella balls into medium sticks, so you can place one on each crepe.

Place a portion of the fresh cheese mixture in the center of each crepe. Add a mozzarella stick on top of the filling and roll the crepe to form a roll. In a baking dish, pour a layer of fried tomato sauce on the bottom. Place the filled crepes on top of the sauce, side by side. Once all the crepes are on the platter, top them with a little more tomato sauce and sprinkle generously with grated Parmesan cheese for gratin.

Place the dish in a preheated oven at 200°C and bake for 15-20 minutes, or until the crepes are very hot and the Parmesan cheese is golden and bubbly.

Remove the pan from the oven and sprinkle chopped fresh basil on top for a fresh, aromatic touch. Enjoy your crepes filled with hot mozzarella, accompanied by a fresh salad or as a main dish.
